Full time Baker (Fortitude Valley)
We're looking for junior bakers and experienced bakers to join our cake decorating & baking team!
Job Summary:
Bakers at Brooki Bakehouse are responsible for the daily production of our bakery items, ensuring consistent quality and adherence to our recipes and standards. This role requires a skilled and dedicated individual with a passion for baking and a commitment to delivering exceptional products.
At present we have positions available for junior bakers and experienced bakers, full time in our production kitchen.
Responsibilities:

Production:
- Prepare and bake a variety of baked goods, including cupcakes, cakes and brownies, according to established recipes and production schedules.
- Accurately measure and mix ingredients, ensuring consistency and quality.
- Operate and maintain baking equipment, including ovens, mixers, and other necessary tools.
- Monitor baking processes to ensure proper cooking times and temperatures.
- Ensure consistent product quality, appearance, and taste.

Quality Control:
- Maintain high standards of food safety and hygiene, adhering to all relevant regulations.
- Inspect and evaluate finished products for quality and consistency.
- Identify and report any issues or discrepancies in ingredients or processes.

Inventory and Organization:
- Assist with inventory management, including monitoring ingredient levels and reporting shortages.
- Maintain a clean and organised work area, adhering to sanitation standards.
- Assist with the receiving and storage of ingredients and supplies.

Teamwork and Collaboration:
- Work effectively as part of a team, communicating clearly and respectfully.
- Assist with other tasks as needed, including packaging, labelling, and cleaning.
- Contribute to a positive and supportive work environment.

Recipe Adherence and Development:
- Follow all provided recipes exactly.
- Where applicable, and after demonstrating proficiency, contribute to testing new recipes.

Packing and Presentation:
- Properly package baked goods for display and customer orders.
- Ensure all products are presented attractively and in accordance with Brooki Bakehouse standards.
Qualifications:
- Proven experience as a Baker in a commercial kitchen or bakery setting.
- Strong knowledge of baking techniques and principles.
- Ability to follow recipes accurately and consistently.
- Excellent attention to detail and a commitment to quality.
- Ability to work efficiently and effectively in a fast-paced environment.
- Strong communication and teamwork skills.
- Knowledge of food safety and hygiene practices.
- Ability to stand for extended periods and lift up to 25kg.
- Valid food handler's certificate is a plus.
Skills:
- Proficiency in using baking equipment.
- Accurate measuring and mixing skills.
- Knowledge of ingredient properties and baking processes.
- Ability to maintain a clean and organised work area.
- Strong time management and organisational skills.
Working Conditions:
- This is a full-time position with varying hours, including early mornings, evenings, and weekends.
- The work environment is a fast-paced kitchen setting.
- Exposure to heat from ovens and other equipment.

Kitchen Production Manager (Fortitude Valley)
We're looking for an experienced production manager to take our production outputs to the next level!
As Kitchen Production Manager, you will be responsible for overseeing all aspects of our 400 sqm kitchen production, ensuring the highest standard of food safety regulations are met. This role includes:
- Managing and motivating a team of bakers and kitchen staff.
- Planning and coordinating daily production schedules to meet demand.
- Maintaining strict adherence to HACCP and food safety regulations.
- Implementing and refining efficient food production procedures.
- Controlling inventory and minimising waste.
- Ensuring the consistent quality and presentation of all products.
- Collaborating with the management team on product development and innovation.
- Maintaining a clean and organised kitchen environment.
About You:
The ideal candidate will possess:
- At least 3 years of experience in a similar Kitchen Production Manager role, preferably within a bakery or food production environment.
- Proven experience with HACCP certification and sound food production procedures.
- Strong leadership and team management skills.
- Excellent organisational and time-management abilities.
- A passion for baking and a commitment to quality.
- Ability to work in a fast-paced environment and meet deadlines.
- Excellent communication and interpersonal skills.
- A positive and collaborative attitude.
