Brooke Bellamy is the founder of Brooki Bakehouse, the Brisbane bakery she opened in Fortitude Valley in May 2022 and has since grown into a multi-country retail business. She is also the author of Bake With Brooki, published by Penguin Random House Australia and one of the country's bestselling cookbooks.
Brooki Bakehouse now trades from stores and airport locations across four Australian states and from sites in Abu Dhabi and Sharjah, with a community of more than four million people built without paid advertising. In November 2025 the business raised AED 60 million from Sharjah developer Arada to fund an international rollout targeting 100 stores globally by 2028.

About Brooke Bellamy

Brooke Bellamy grew up in Tasmania. Before Brooki she built World of Wanderlust, one of Australia's largest travel blogs, which she has described as where she learned everything she knows about business.
She moved to Brisbane in January 2022 and opened Brooki Bakehouse in a heritage building on Marshall Street, Fortitude Valley, in May 2022. For roughly eight months, almost nobody came. The turn came from filming the work itself — the early starts, the bakes, the building of a bakery — and posting it to TikTok. Within months Brooki was selling around a thousand cookies a day in store and thousands more online.
Four years on, Brooki trades across four Australian states, in four airports, and in the UAE, with a Dubai flagship and a US flagship ahead.
She is the author of Bake With Brooki (Penguin Random House Australia, 2024; DK in the United Kingdom and United States) and teaches online baking masterclasses at bakewithbrooki.com.
