Brooki is popping up across Sydney
Four weekends, four centres, and each one is our first time there. Every pop-up runs Thursday to Sunday and trades the same hours as the centre it is in — walk up, no booking, while stock lasts. We sell out most days, so earlier in the day is safer than later.

Openings, signings and pop-ups are announced on Instagram and to our email list before they go anywhere else, then posted here. Some of them sell out the same day.
The kinds of events we run
Store openings
Every new Brooki opens with something — free cookies, early access, and usually a queue. Dates and opening-day offers are announced one to two weeks ahead.
Book launches and signings
Bake with Brooki is 100 recipes written and photographed by Brooke, published by DK. Signings run alongside each new market the book launches in.
Collaborations
One-off nights and limited flavours with brands and creators. The night before our Sydney flagship opened, we hosted a Close Friends event with Instagram.
Pop-ups
We take Brooki on the road, including internationally. Through September and October we are popping up across Sydney — Castle Hill, Westfield Chatswood, Westfield Parramatta and Westfield Penrith — for four days at a time.
Catering your own event
If you are running the event rather than attending one, we cater it. Cookie catering starts at $175, mini cookie catering from $50, and cupcakes from $35 — for launches, conferences, weddings, birthdays and anything else that needs feeding. We also do logo cupcakes and branded cookie boxes if the event needs your name on it.

Private hire and group visits
For group bookings, filming, media visits or anything that needs a store outside normal trading, email hello@brookibakehouse.com with your date, numbers and which store you have in mind. We will tell you honestly whether it is possible — some of our stores are small, and our Fortitude Valley bakery is the smallest of all.
Event FAQs
- Where are the Brooki Sydney pop-ups and when are they on?
- Four Sydney pop-ups, each running Thursday to Sunday: Castle Towers at Castle Hill from 3–6 September, Westfield Chatswood from 10–13 September, Westfield Parramatta from 24–27 September, and Westfield Penrith from 1–4 October 2026. It is our first time at all four.
- What time are the Sydney pop-ups open?
- Each pop-up trades the same hours as the centre it is in. Castle Hill and Penrith are Thursday 9am–9pm, Friday 9am–5:30pm, Saturday 9am–5pm and Sunday 10am–5pm. Chatswood and Parramatta are Thursday 9:30am–9pm, Friday 9:30am–6pm, Saturday 9am–6pm and Sunday 10am–6pm.
- Do I need to book for a Brooki pop-up?
- No. Pop-ups are walk-up and free to attend — just turn up during centre trading hours. We do sell out on busy days, so earlier is safer than later.
- Where is the Bake with Brooki UK book signing, and how much are tickets?
- Waterstones King's Road in London, on Wednesday 9 September 2026 at 6:00pm. Tickets are £26 and include a copy of Bake with Brooki. Book through Waterstones.
- When is the Mount Gravatt store opening?
- Friday 18 September 2026, from 10:00am, at Westfield Mt Gravatt in Upper Mount Gravatt, QLD. Walk in — no booking needed. See all Brooki locations.
- Do I need a ticket for a Brooki event?
- Store openings and pop-ups are free and walk-in. Book signings and anything capped are ticketed, and the card above will say so.
